Cerrado is a huge region in Brazil, meaning "Savanna" or central plateau. Coffee beans grown in this region are cultivated at an altitude of 900 to 1,250 metres above sea level, quite a bit lower than Strictly Hard Bean (SHB) Central American Coffee Beans.
Although Cerrado beans are softer and typically we wouldn't suggest roasting it dark, this bean is an exception to that rule. Roasting it dark will bring out its exceptional nutty flavour and enhance the profile of the coffee. That being said, it is important to be careful when roasting this bean to a dark roast level.
